Baked Chicken and Potatoes

Happy Friday All,

Friday Dinner at the Penias household always has one thing (almost always).

Baked Chicken and potatoes.

Why?
Well, it’s easy to make, delicious, and you don’t need to wash lots of dishes.
 this is my personal favorite with some upgrades So here we go:

Ingredients: (this can feed 4-6 people)

4 pieces of Chicken (I use chicken quarters), with the skin. Try to use the same part of the chicken so the cooking time will be the same.
4 potatoes -the best one for baking is the russet (the russet hold its shape and will not fall apart), if you don’t have any just use whatever you have.
2 sweet potatoes
1 onion
1 tomato
1 eggplant
1 bell pepper
6 dried plums
6 dried apricots

Marinade:
2 tablespoons sweet Paprika (you can use half sweet and half spicy)
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon honey (this will give the chicken a nice brownish color)
1 crushed garlic clove
** If you like it spicy – add some red pepper flakes of 1 teaspoon of chili sauce

Directions:
Preheat oven to 425F (220C).

In a large bowl, mix all the marinade ingredients. (Save 2 tablespoons of the marinade for the veggies) Rub the chicken with the marinade and make sure you cover all. Let the chicken rest in the marinade between 1-12 hours (refrigerated).














Peel and dice the potatoes as even as possible (to make sure cooking time is even).
Slice the tomato, onion,bell pepper and eggplant (the onion into rings and the rest into quarters)
**I like to season the veggies and potatoes with some of the marinade mix, but you can also use fresh herbs **

Place the chicken onto a baking sheet (skin side up), in between the chickens place the potatoes and veggies.
Scatter the plumes and apricots on top.













Cover with foil and bake for 45 hour (until chicken is tender). Check every 25 min or so.
After 45 min remove foil and bake for 15 more min to allow the chicken to brown.

Serve it Hot!

I wanted to add a pic of the bakes chicken and potatoes, but the only thing left was the bones...
