Keeping My Promisess

Cheese Matzo Pancakes (this is a good way to use leftover Matzo)

Ingredients:

7-8 Matzo sheets

3 cups of water

1/2 cup of soft cheese (like Cottage/ you can also use sour creme)
1 cup Mozzarella (shredded)**

1 teaspoon Salt
1/4 teaspoon black pepper

3 eggs

Oil for frying


 

Directions:

In a large mixing bowl, pour water and let the Matzo sheets soak until they are soft and mushy (they will absorb most of the water)

Once they are soft, strain the water and squeeze the Matzo from the water as much as possible.

Place back in the bowl.


 

Add the of the ingredients and eggs – mix to combine.

The mix will be sticky and wet.


 

Heat oil to 350F, once oil is hot, with wet hands form a patty out of the batter and cook 1 min each side (until golden brown).

Place on a papear towel,

Serve hot !


**in this recipe you can use any cheese combination you want, just make sure you use soft and hard cheese. this will prevent the pancakes from falling apart while frying them.



1 cup white Basmati rice
1 cup of water
2 cups of milk
2 tablespoons Sugar (you can add or reduce according to taste)


Cinnamon 



Directions:


Boil the water milk and sugar in a pot,
rinse the Rise and add it pot.

Lower the heat to low, cover and let cook for about 20-25 min (no need to stir).
Make sure to check after 15 min, if all the liquid evaporated - add milk enough to cover the rice.

When rice is soft and mixture is a bit sticky - its ready

sprinkle Cinnamon on top and enjoy!
 You can refrigerate it for about 2-3 days, to warm up, just add hot milk.
